Message temp is 170F and fully open is 194F.

The 170F temp is when the thermo just cracks open. Normal operating temp is 180 to 185F. The thermostat modulates its valve quite often to deal with the varing conditions of heat load. If it is lazy in the movement or restricted to far open or to far closed the temp is not properly maintained.

With all your mods no doubt you are far from stock but coolant temp is still very important to the ECU. What mods were done to the ECU mapping if any?
